Mushroom Gravy Poutine!

When I first went vegetarian I was really looking for a few meals to keep me stable. Then I came across this delicious meal! Poutine is essentially fried/baked potato cubes with a gravy and some cheese curds. I made my own take using some mushroom gravy and roasted potatoes and topped it with Mozzarella cheese!

INGREDIENTS:
Mushroom Gravy:
1 cup Mushroom Broth (If you need the recipe I can write it at a later date)
1/4th cup flour (Any kind works!)
3 TBSP Butter
2 Baby Bella Mushrooms minced
Potatoes:
3-5 Red Potatoes
3 TBSP olive oil
1 TSP Garlic salt
1/2 TSP Peppercorns
1 TSP Dried Rosemary
1TSP Italian Seasonings

DIRECTIONS:
1. Preheat oven to 350.
2. In a pestle and mortar combine peppercorns, garlic salt, rosemary, and Italian seasonings and grind into a powder.
3. Wash and chop your potatoes into cubes, then drizzle with olive oil and toss with the seasonings.
4. Bake the potatoes for 20 minutes.
5. In a skillet melt the butter and whisk with flour. This will make a roux. Then whisk in the mushroom broth and let cook until thickened. Then add the Baby Bella's and get ready to serve.
6. Add a scoop of potatoes, top with gravy and a pinch of mozzarella and enjoy! 

This recipe is super delicious and easy to make vegetarian or vegan! However, it does contain flour so if you have celiac disease please avoid! If you have any questions please let me know down below!
