Deviled Eggs

Ingredients:

6 Hard-Cooked Eggs

1/4 cup mayonnaise or salad dressing

1 teaspoon yellow mustard

1 teaspoon vinegar

1/2 teaspoon paprika powder

Paprika or parsley sprigs (optional)

1. Halve hard-cooked eggs lengthwise and remove yolks. Set whites aside. Place yolks in a bowl in a bowl; mash with a fork. Add mayonnaise, mustard, and vinegar; mix well. Stuff whites with egg mixture. Sprinkle paprika and/or parsley sprigs, if desired.

Greek-Style Deviled Eggs: Prepare as above, except fold in 2 tablespoons feta cheese, 1 tablespoon finely chopped pitted kalamata olives, and 2 teaspoons snipped fresh oregano into yolk mixture.

Curry-Deviled eggs: Omit mustard and vinegar. Stir all other ingredients. Add 1 teaspoon or so to the mixture. and 1/2 teaspoon additional paprika powder.
