If the Organosi was created around the Dark Ages, the Sentries had been around since ancient times and had hunted so many unscrupulous individuals, hence their leader pseudonym-- Artemis.
May it be a woman or a man, s/he will be called Artemis. And because of that, the name "Artemis" had a one-billion-dollar bounty. But no one Actually knew the real name of Artemis.
Just like the Goddess Artemis who was known by many names, the Artemis of the Sentries were also known by many names, none of which were their real identity.
The Sentries were an individual organization before they joined forces with the Organosi under the Council of Justice of the 2nd Idrytis. All because they had the same goal, which is to rid the world of unscrupulous beings.
But, the Council of Justice betrayed the 2nd Idrytis and the Sentries so they had a dissolution of agreement with the Organosi. Signed by Sweet Monday Velasquez, the 1st Idrytis, a dissolution that contains a letter of agreement for the Sentries to part ways with the Organosi but would still support the 1st and 2nd Idrytis.
