Sate Madura is one of Indonesia's culinary specialties originating from Madura Island. This satay is made from chicken or mutton skewered with sticks and grilled over hot coals. The satay is served with savory and spicy peanut sauce, as well as rice cake, sweet soy sauce, and cayenne pepper sambal.
Madura satay is very popular throughout the archipelago. Many Madurese satay vendors peddle their wares with carts that read "Sate Khas Madura". However, do you know how the origin of Madura satay came about?
According to folklore, Madurese satay originated from the visit of Arya Panoleh, a Madurese ruler, to Ponorogo, where his brother, Batara Katong, ruled.
There, Arya Panoleh was treated to Ponorogo satay, a dish made from chicken skewered with sticks and seasoned with garlic, turmeric, ginger and salt.
Arya Panoleh was initially hesitant to taste the Ponorogo satay, as he had never seen such food before. However, Batara Katong convinced his younger brother that Ponorogo satay was the favorite food of the warriors in Ponorogo, who had a wira'i (brave and tough) nature.
Arya Panoleh finally tried Ponorogo satay and found it delicious. He then learned the recipe and how to make Ponorogo satay from his brother, and brought it to Madura.
In Madura, Arya Panoleh changed the seasoning of Ponorogo satay slightly, adding peanuts, petis, and shallots.
The name "satay" itself comes from the Javanese dialect of "sak biting" (pronounced "sak bet").
Satay ingredients:
4 chicken thigh fillets, skin on and meat off.
5 tablespoons sweet soy sauce
1 tablespoon cooking oil

200 grams peanut skins, roasted, mashed
3 curly red chilies, fried
4 candlenuts, fried
2 large red chilies, fried
3 tablespoons combed brown sugar
1 teaspoon salt
500 ml hot waterComplementary ingredients:
4 pieces of lontong
2 tablespoons sweet soy sauce
3 limes
2 tablespoons fried shallots for toppingChili sauce ingredients (puree):
15 red chili peppers, boiled
4 curly red chilies, boiled
1/4 teaspoon saltHow to make madura chicken sate:
1. Make the peanut sauce first. Grind peanuts, curly red chili, candlenuts, big red chili, brown sugar, and salt. After that, pour water and cook until cooked and thick.
2. Take 150 grams of peanut sauce, sweet soy sauce, and cooking oil. Mix well and dip the chicken in it, coating it well.
3. Stick the chicken on skewers, then grill until half cooked. Marinate again with peanut mixture and grill again until cooked.
4. Continue to make chili sauce, blend chili peppers. Add salt and mix well.
5. Serve the satay with the peanut sauce, and other accompaniments.
