• 2 1/2 cup basmati rice

• 1/2 tablespoon fenugreek seeds

• 5 tablespoon sesame oil

• 1 1/2 cup urad dal

• 1 1/2 teaspoon salt

• Soak urad dal, rice and fenugreek seeds for 4-6 hours.

• Drain the water and make a fine paste. Make sure the consistency is thick

• The batter needs to be well-fermented so keep the batter in a warm place to ferment. Once the batter risen then, add salt and mix well. The Idli batter is ready.

• Now take the Idli moulds and grease it with some oil and immediately pour the batter.

• Let it steam for 8- 10 minutes on a medium flame. Leave it for another five minutes and then unmould.

• Serve hot and fluffy idli with sambar and chutneys of your choice.

• Correct proportion is very important. Follow 4:1 ratio, take four parts of rice and one part of urad dal and soak overnight.

• Fermentation time should be 10-12 hours for best result.

• Warm temperature is essential for fermentation.

• Cooked rice gives a soft textrue to the idli but, you can also use flattened rice instead of cooked rice. Soak poha or flattened rice for few minutes and grind it along with other ingredients. You will get soft Idli.
