Poseidon loves Sally so he says 'take this blue necklace (i don't know) to protect you. Anything blue will protect you.' But when Gabe comes he questions her obsession with the colour blue. So because of trying to protect Percy and her rebal streak, she keeps the blue stuff and constantly goes out of her way to make anything she can blue.
This stuck with Percy and he has only ever used blue stuff since.
