This recipe, like the last one, came from my story Sands of Time. This time chapter 10 and was a mention of something that happened before. I combined a recipe I found for cheesecake tarts, a recipe I had for ginger biscuits, and my knowledge of making jam. Like I said before my story takes place in present day with flashbacks to 5,000 BCE, I liked this as it actually is a tie in with Calintha's story Heart of Stone which shares a universe with mine and I really recommend it if you like Greece and adorable sunshine babies.
Crust:
2 cups flour
1/2 tablespoon cinnamon
1/2 tablespoon ginger
1/4 teaspoon ground cloves
1/2 teaspoon nutmeg
1/4 teaspoon baking soda
1/8 teaspoon salt
1/4 cup unsalted butter
1/4 cup packed brown sugar
1 medium egg
1/4 cup dark corn syrup
1 teaspoon vanilla extract
Filling;
2/3 cup powdered sugar
2/3 cup Greek yogurt
1 teaspoon vanilla extract
4 oz goat's cheese
Topping;
2 figs
1/2 cup sugar
Make the crust first.
1. Combine flour, spices, baking soda and salt in bowl and set aside.
2. Beat butter and sugar until light and fluffy before adding egg, dark corn syrup and vanilla extract and beat again.
3. Slowly add in dry mixture beating to combine as it as you add.
4. Wrap in plastic wrap and let chill in fridge for at least two hours. Do not go over 24 hours.
5. Roll out dough and put in little tartlet pans. Cook at 350 degrees Fahrenheit for 6 to 8 min.
6. Let cool completely.
Filling be made next, do not make until tartlets are completely cool.
1. Beat all the ingredients until smooth.
2. Add into the tartlet shells when they are completely cool.
3. Put in fridge and chill for at least four hours. Better to do over night.
Topping.
1. Chop figs finely depending on how much of a chew you want. If you want it to be like a jelly chop them very small, if you want them to have pieces of the fig inside like a compote chop them into thin slices.
2. Once it is cool you can add a teaspoon on top of each tartlet. You may have some fig jelly or compote left. Would probably be good mixed with Greek yogurt.
*I have never made this recipe before. It should work but I make no promises.
**Cheese cake was found to be served in the first Olympics we have confirmation happened but was made in a more modern version. The ginger cookie crust came from the fact that there are signs that ancient China did trade with Greece over the Silk Road, but the connection is tenuous at best. But I liked the idea. So I will call this a 'Modern' version of what the first Olympic athletes might have been served.
