A quick note before I start, everyone's practice is different so everyone needs different kinds of plants, or none at all. But If you're working with plants, I believe that these would be essentials.

Witchy part
Rosemary is a species of sage and can be used to replace any other herb/plant in terms of spellcraft. It replaces any other flora (but make sure your intentions are strong if you're going to do so) as well as being essential in many spells, making it a essential plant for witches.

Sciency part
Rosemary, also known as a this, scientific name is salvia rosmarinus and as mentioned before is part of the sage family(it is also considered part of the mint, labiatae and deadnettle). It grows flowers (about 5mm) that are light purple, blue, pink or white. They have overground roots as well as underground, which don't need much pruning unless you want to keep where it grows select. It blooms during spring and summer, but is best planted during spring or autumn.

Some background
The name Mary derives from the Virgin Mary from christian religions and is a symbol of purity and holiness. (There's not much else to say soz ma dudes)

Care part
Rosemary is an easy to take care of plant, it requires average watering (but not too much to drown it duh) and doesn't need fertilisation(but if you want to it only needs it once a month). It's low maintenance and drought-resistant, making it easy to take care of. It needs full sunlight, about six hours a day or more. It prefers hotter climates but can withstand up to -15c. Although it can survive in pretty much any type of soil it prefers richer or clay soils. When planting it makes sure to give it plenty of space to grow.

Blessed be 🌿
