African traditional pot beef stew(Grandma's recipe)

Growing up I always watched grandma cook, her cookware or even recipes were never as fascinating until I went to new places with more modernized cookware and improved recipes. I embraced new tastes but Grandma's food always tasted more natural. Today am sharing her simple,healthy, tasty beef pot stew😊

Procedure
1. To a clean clay pot put a clean piece of banana leaf approximately 10inches width folded in half lengthwise. The banana leaf adds a natural aroma to the beef and it should be a bit old because young ones are bitter.

2. Chop the meat into sizable pieces,wash it well, and put in the pot. Add ½ table spoon of salt,pour 1½ litres of cold water.

3. Put on fire preferably cook on fire wood. Let it simmer for about 20minutes without covering. Cooking without covering gives it a smokey flavour and natural aroma.

4. After 20 minutes cover and let it cook for more 20 minutes while chopping the tomatoes.

I prefer chopping onions a minute before adding them to the pot to make sure I add them with all their flavours.

5. Add tomatoes ,stir to mix well, add salt to taste. Cover and let it cook for more 10 minutes,chop onions and add to the pot,mix well,cover and let it simmer for more 10 minutes. It's now deliciously tender and ready to serve.
Note: Onions are added last so that they don't over cook and lose most of their flavour.

Serve with matooke, kalo(ugandan milletbread), rice, mashed potatoes or your heart's desire😊😊

Note: Banyakole have a special bowl for eating meat especially with kalo called Orwabya which is almost similar to the Chinese and Japanese serving bowls but smaller. However, these have slowly been replaced by modern serving bowls.
