Jon Arryn heard what was going on and along with the King's guard went down to the city and saw Caspian fighting the city watch and winning. It took two out of the seven members of the King's guard to subdue Caspian and have him locked up and awaiting Robert's judgment. When the trial started he was questioned about the fight, and he asserted that he was protecting a merchant who was being attacked by the city watch members. This trial would have gone on for hours until Jon Arryn convinced Robert to let him foster Caspian. Robert instantly agrees with Jon Arryn's request and so Caspian would be trained by Jon Arryn in everything, and just like Ned would see Jon Arryn like a grandfather.
