If Itachi was never told about Himeko's willingness to die for him then she'll do it but if he was then she'd kill herself along with her Mangekyo Sharigan. Death deceives, scratches, and plays with your mind, until you slowly and painfully loose your grip on reality. He'll make you believe he's a different person, that there's a sliver hope for him.
