There are times where the traveler became a matchmaker of sorts, times where Albedo and Sucrose accidentally blew up a table, and other minor tales. But there are also major things like when the 6th of the Fatui Harbingers was made friend instead of foe as a storm rolled in, events where Kazuha and Gorou got lost in a cave system for what felt like days, and even times where major holidays were celebrated in traditional national ways.
