Her mom just is unable to see her brother's inventions because of that pesky plane of existence we know as "reality". How does she stay sane? Seriously, if you put yourself in Candace's shoes for an episode (as in you wouldn't know about the Doof vs. Perry plot) then it would be an almost Lovecraftian reality for you every day as the world itself tries and succeeds to make you look insane.
