My 3 Years working at the Trellis while in college changed my life back in the early 80s. With the restaurant's closing announced in early 2020, I needed to share this short letter. My hope is to honor the legacy of the Trellis and what restaurants like it do when a chef celebrates regional food and delivers it in a way the it transforms a community. The Trellis was a James Beard Award acknowledged restaurant founded in 1979 mainly known for its "Death by Chocolate." It was founded by Marcel Desaulnier, Tom Power and John Curtis and celebrated as a regional culinary showcase for the ingredients of the region and refined techniques.
