Everyone is different. Unique in their own ways and people don't change. They're either good or bad. Although on some occasions they are in between, they are not fully evil nor fully good, take janey and tori for example... They grew up in gravity falls. No they weren't raised by their parents nor their grandparents they raised eachother. It wasn't so hard they were part dream demon of course...and part Angel yes i know 'BUT ITS FORBIDDEN!' thats exactly why they had no one to raise them.
