Voici la recette des frites selon l'ami Ronald. Du champs de patates à la friteuses, il s'en passe des choses. Si si, du champ de patate : oui, parce que chez Mc Do, les frites sont faites à base de vraies pommes de terre  :P Récoltées par une moissonneuse, elles sont triées et envoyées chez Mc Cain qui va les laver, éplucher, couper... et là, elles sont déshumidifiées et aspergées de dexrose, un dérivé du glucose : conservation, gout, aspect... l'histoire ne nous donne pas la vraie raison. Livrée congelées, elles sont cuites dans une huile végétale.
Prêt pour faire des frites comme chez Mc Do ?
 
Ingrédients
Pour 2 personnes :
500 g de pommes de terre jaunes
2 cuillères à soupe de sucre glace
De l'huile de friture végétale (tournesol + colza)
 
Préparation
Laver et peler les pommes de terre.
Les couper en frites d'environ 7 mm de côté.
Les assécher en les frottant dans un chiffon propre.
Les déposer dans un saladier et les saupoudrer d'un peu de sucre glace.
Mélanger pour répartir le sucre de manière homogène.
Faire chauffer l'huile de friture à la température habituelle (160°C environ).
Lorsque l'huile est chaude, y verser des frites (pas trop, elle doivent pouvoir bouger !) et réaliser un premier bain d'environ 3 minutes.
Les réserver et renouveler l'opération avec le reste des frites.
Faire une seconde cuisson des frites à la même température, pour 3 minutes environ.
Le temps de la seconde cuisson est à ajuster selon la couleur souhaitée.
Une fois cuites, réserver les frites dans un saladier tapissé de papier absorbant.
Saler à convenance.
C'est prêt !
