Jacinta Potter has had enough of the Wizarding world. The media had taken to sitting on her doorstep. So, being the irrational person she is, she decides up uproot and travel the world for a couple years. Soon, her travels brought her to New York City and so she decided to plant her roots and open a café in honor of the marauders (some of the greatest pranksters to ever live, obviously).
