Cooking time:-20 minutes
*Cassava tubers cut into 1cm cubes - 1200g
*Ground sesame/beniseeds/igorigo - 3/4 milk cup
*Toasted sesame seeds - 2 dessert spoons
*Chopped ugu leaves - 3 milk cups
*Chopped uzuza leaves - 1/3 milk cup
*Ground uzuza seeds - 3/5tsp
*Palm oil - 90ml
*Tomato/pepper puree - 1/3 milk cup
*Water - 2700ml
*Ginger - 3/4tsp
*Garlic - 3 cloves
*Chopped onion - 1 medium
*Seasoning
*Ground crayfish - 3 dessert spoons
*Pre cooked meat or dry fish/garnish
Preparation:-
1. Boil cassava with all other ingredients except uzuza leaves and seeds, ugu leaves and toasted sesame seeds.
2. When cassava is almost cooked, mix in uzuza leaves.
3. When cassava is cooked, mix in uzuza seeds. Correct seasoning and consistency.
4. Mix in ugu leaves and turn off heat.
5. After dishing sprinkle toasted sesame seeds.
