Love can make people do things that they would not not normally do.
Mario loves his kingdom, more importantly, the princess that rules it. He is getting irritated that Bowser is trying to ruin the kingdom, and have the princess marry him. He takes it almost to far.
He takes on Bowser, and creates a new world, one where things are much different.
