For chapters:
Use of italic: What the character is thinking in that moment if it is between dialogue. If not, it's just for dramatic effect LOL. 
Quoted sentences: either a character is talking or it's an air quote situation. (Easy to decipher)
Use of Non-quoted sentences: description/ what's going on.
