Maybe because deep down all he really wanted was an honest life on a ranch, with a lady he could worship and provide for like a real man should. And in his short time with Rosemary he allowed himself to play make believe that that could ever happen. But like most good things in Arthur's life - that came to a crashing end when Dutch uplifted the gang from that town to move on again.
