Stars exited way before the actual civilization of humans evolved. They were named after actual stars on the sky, that later formed a weird shape, which soon became something we call nowdays "humans". Stars are powerful. Many people also call them gods, but overall, it's the same whichever way you call it. Yamato is no exception. He's a Star, a starborn, who's purpose is to go back in time to avoid an ongoing war caused by the seventh Star.
