The Collapse (AU) (TOTW)

This takes place in a Hyrule where there is no chosen one and Zelda has a different appointed knight. Link is a traveler after his parents passed, instead of becoming a knight, he decides to become a traveler and visits many towns. Eventually, he is caught in Gerudo Town and is forced to do assignments by the Chief of the Gerudo.
