Ghee has a longer shelf life compared to regular butter due to the process of clarifying it. During the clarification process, the moisture and milk solids are removed, leaving behind pure, clarified fat. This reduction in moisture content significantly inhibits the growth of bacteria, making ghee more resistant to spoilage.
