To cook vegetables, leaving raw vegetables out overnight can also pose a risk of bacterial growth and contamination. Bacteria can multiply rapidly at room temperature, increasing the likelihood of foodborne illnesses. The 2-hour rule applies to perishable foods, including raw vegetables. If raw vegetables have been left out for more than 2 hours at temperatures above 40°F (4°C), it's advisable to discard them to prevent the risk of foodborne pathogens.
