DL-Malic Acid, 296 acidity regulator, CAS no.617-48-1, is widely used as acidity regulator. Compared with citric acid, E296 food additive DL malic acid has a higher acidity (the acidity is 20% stronger than citric acid), but acidity regulator e296 has a soft taste (with a higher buffer index), a special flavor, does not damage the mouth and teeth, is metabolically beneficial to the absorption of amino acids, does not accumulate fat, is a new generation of food acid, and is praised as "the most ideal food acid" by the biological and nutritional circles.
