Quick guide to the AUs:
Human AU means, the story is set in our world, with no Servamps and other supernatural things and the characters live normal lives (for example go to school/college).
If I don't say that it's a specific AU at the beginning of the story, it's set in the normal Servamp universe, maybe with some minor changes.
Every other AU means the characters fit the name of the AU and would be mostly human if not stated otherwise.
