Ngày nay, "ăn chay" không còn là tín ngưỡng của riêng một tôn giáo mà nó đã trở thành xu hướng ẩm thực mới, chính vì vậy dạy nấu ăn chay đã trở thành chương trình học không thể thiếu trong các chương trình đào tạo nghề Bếp. Vậy đâu là lý do "học nấu ăn chay" được nhiều trung tâm dạy nấu ăn xem là một trong chương trình học hàng đầu. 

Thứ nhất, học nấu ăn chay rất có lợi cho sức khỏe.
 
Việc ăn chay sẽ giúp con người có một cơ thể khỏe mạnh, ngăn ngừa được một số bệnh tật nguy hiểm như tim mạch, ung thư, tăng huyết áp,.. Bởi khi ăn chay chủ yếu là ăn các loại thực phẩm có nguồn gốc thực vật giàu dưỡng chất như vitamin, chất xơ, chất chống ô xi hóa, hợp chất tự nhiên, ít chất béo nên rất có lợi cho sức khỏe.
 
Thứ hai, học nấu ăn chay có tác dụng làm đẹp.
 
Theo nhiều nghiên cứu,  ăn chay không những có lợi cho sức khỏe mà còn có tác dụng làm đẹp. Bởi những loại rau củ quả vừa có ít chất béo, ít calo giúp cơ thể không bị mập vừa giàu các loại vitamin và khoáng chất có lợi cho làn da, giúp da khỏe đẹp hơn.

Thứ ba, học nấu ăn chay để tìm kiếm một chốn yên bình trong tâm hồn.
 
Cuộc sống hiện đại đôi khi quá căng thẳng mệt mỏi, con người sẽ lựa chọn cách sinh hoạt giúp tâm trí bình yên, thanh tỉnh và "ăn chay" sẽ giúp tâm hồn hiền hòa và bình yên hơn.

Thứ tư, học nấu ăn chay sẽ giúp bạn chi tiêu tiết kiệm hơn.
 
Vì ăn chay bạn sẽ ít tốn tiền vào việc chăm sóc sức khỏe vì các loại bệnh như tim mạch, ung thư, tăng huyết áp...

Lý do cuối cùng và cũng rất quan trọng, ăn chay để bảo vệ môi trường sống.
