He didn't notice her when she first boarded the ship. He was yellow and she was blue. Karin White was assigned to the Enterprise as a punishment for some bad behavior at the Academy. It wasn't really a bad thing because she enjoyed working in the Medical Bay as a medical officer.
Nero's ship had attacked Vulcan and soon led to Chekov meeting Karin for the first time after observing her for a while. It takes a while for Karin to actually care for him but when danger comes, you care most.
