This book brings together recipes we explore as hospitality students during our training journey. While preparation methods may differ from one person to another, all recipes shared here are based on the techniques and experience I have learned. Unless stated otherwise, all ingredient quantities are measured for four portions, following standard hospitality practice.

This, decidedly, is a dumb idea for me to attempt. Am I still going to attempt it? Hell yeah. Welcome to my commentary as I write for ONC 2026 with weekly updates. And, because of my experience working customer service, sometimes people don't read so I'm going to try and make this very clear: This is NOT an ONC story. Just the commentary and author notes.
