On the far edge of a sea that did not appear on modern nautical charts stood Thalmyr, the city of ancient stone. It had not been built: it had emerged. Its foundations seemed to grow from the cliff itself, as if the rock had decided, in a distant age, to imitate the forms of human habitation. The houses were low, massive, devoid of ornament; the windows narrow like wounds cauterized by time. Every street sloped imperceptibly toward the sea, as if the entire city were drawn to it.

Los principales factores ambientales que influyen sobre la tasa respiratoria de los productos cosechados son la temperatura y las concentraciones de oxígeno y dióxido de carbono en la atmósfera de almacenamiento. Los tejidos vegetales vivos mantienen sus funciones normales dentro de un margen limitado de temperaturas, y al elevarse la temperatura aumenta la respiración, especialmente entre los 5° y los 20° C. Las temperaturas mínimas toleradas permiten demorar el aumento climatérico y reducir el punto máximo de la actividad respiratoria. Las concentraciones de oxígeno y dióxido de carbono influyen directamente sobre la respiración aerobia, donde se absorbe oxígeno y se libera dióxido de carbono. La reducción del oxígeno o el aumento del dióxido de carbono disminuyen la respiración, aunque niveles extremos pueden generar procesos anaeróbicos y provocar alteraciones en los tejidos. El control de la ventilación y de la atmósfera permite regular la actividad respiratoria dentro de límites favorables. El etileno es una sustancia que se forma durante la maduración de las frutas y ejerce una influencia notable sobre la respiración. Este hidrocarburo acelera la actividad metabólica, adelanta el climaterio y modifica la coloración y otros procesos asociados a la maduración. Su efecto puede observarse incluso en bajas concentraciones, aunque disminuye cuando las temperaturas de almacenamiento son reducidas.
