There are basically two theories on why Eren laughs at Sasha's death. The first one is that Eren laughs at the fact about Sasha's last word, "Meat". It may cause him to burst into laughter since Sasha only cared about meat even during her last breath.
The second theory believes that Eren already knew about the death of Sasha, yet he wasn't aware of how Sasha got killed -- it's like knowing the ending of a movie without knowing the plot leading to the ending.
(Another theory is it was a hysterical laugh meaning he was in so much pain he just laughed- it's a reaction some people have when they can't take in the pain anymore. Idk if i explained it well)
