Caribbean Gungo Soup

Ingredients

- 1 cup pigeon peas
- 2 cups vegetable broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 medium carrot, chopped
- 1 medium potato, peeled and chopped
- 1 Scotch bonnet pepper, chopped (optional)
- 1 teaspoon turmeric powder
- Salt and black pepper, to taste
- 1 sprig of thyme
- 1 sprig of Mexican mint
- 1 cup callaloo, chopped
- 1 cup cabbage, chopped
- 1 bell pepper, chopped
- 1 scallion, chopped
- 1 medium yam, peeled and chopped (optional)
- 1 tablespoon white vinegar

Recipe

1. Sauté the onion, garlic, and carrot in a pot until tender.
2. Blend the sautéed onion, garlic, and carrot in a blender or food processor until smooth.
3. Add the blended mixture back into the pot.
4. Add the pigeon peas, vegetable broth, turmeric powder, salt, black pepper, thyme, and Mexican mint. Bring to a boil, then reduce heat and simmer until the peas are tender.
5. Add the potato, Scotch bonnet pepper (if using), callaloo, cabbage, bell pepper, scallion, and yam (if using) to the pot. Simmer for an additional 10-15 minutes or until the vegetables are tender.
6. Blend half of the soup in a blender or food processor until smooth and creamy.
7. Return the blended soup to the pot and stir to combine with the remaining unblended soup.
8. Stir in the white vinegar.
9. Serve hot and enjoy!

Additional Tips and Variations:

- Use a variety of vegetables to change up the flavor and texture.
- Adjust the level of heat to your liking by adding more or less Scotch bonnet peppers.
- Add a squeeze of fresh lime or lemon juice for brightness and balance.
- Make it creamy by adding a splash of non-dairy milk or cream.
- Experiment with spices like cumin, coriander, or paprika for a unique flavor.
- Try the roasted vegetable version by roasting the vegetables in the oven before adding them to the soup.
- Make a curry version by adding a blend of Indian spices like curry powder, garam masala, and cumin.
- Add a smoky flavor with a pinch of smoked paprika or chipotle peppers.
- Make a hearty version by adding diced tofu, tempeh, or seitan for extra protein and texture.

_Gluten-free version:_ Use gluten-free spices and ingredients to make the soup gluten-free.
_Spicy version:_ Add more Scotch bonnet peppers or use hot sauce to give the soup an extra kick.
_Mild version:_ Use only one Scotch bonnet pepper or omit it altogether for a milder flavor.
_Instant Pot version:_ Cook the soup in an Instant Pot for a quicker and easier version.
