The Philippine native chicken constitutes 46% of thetotal chicken population of the country, which isaround 76 million heads. This industry provideslivelihood in terms of additional income, foodsecurity, and opportunity to convert farm wastes andby-products into high value products. (LivestockResearch Division, DOST-PACAARRD S&T MediaService, 2016). Research have shown that the nativechicken meat is superior compared to broiler meat interms of its sensory characteristics, as well asconsumer preference in the preparation of varioustraditional dishes (Lambio et al., 2000).
Among the various native chicken breeds in thePhilippines (Banaba, Paraoakan, Bolinao, amongothers), the Zamboanga Peninsula (ZamPen) nativechicken is a purified Joloano breed currentlypropagated by Western Mindanao State University(WMSU). Initial data gathered from this purified typeof native chicken breed have shown positive results interms of increased production of eggs, day-old chicks,and slaughter native chickens (Narvaez, 2016).
Limited studies have shown the proximatecomposition of Philippine native chicken meatspresent in the Philippines, (Fernandez, n.d.). Thisresearch then addresses the concern of expanding thedata by presenting and comparing the cut-up partquality of hen and rooster ZamPen native chicken (onits several cut-up parts) in terms of proximatecomposition. In addition, this paper will also show adescriptive comparison of its obtained data withselected Philippine and Asian native chicken breeds.
