An Anime you wish never ended and just continued
A hard question to answer, it's a lot more easier to answer "An anime you're happy that ended" because I just wish almost all of the Anime I've watched should have continued on.
Naming a few of them: 07 Ghost, Devil Survivor: The Animation, Amnesia, Tonari no Kaibutsu-kun, Star Driver, Durarara, Pandora Hearts, K, Zetsuen no Tempest, Another, D. Gray-Man, Fairy Tail, Ouran High School Host Club, Nurahyon no Mago, Kaichou wa Maid-sama, Sword Art Online and a lot more.
Then the Anime I'm happy that ended (not in a bad way, it means I was happy with the ending): Death Note, Kuroshitsuji, AnoHana, Tales of the Abyss, Inuyasha, RomeoxJuliet and Mirai Nikki.
The point is, a lot of anime has the potential to continue because not all Anime ended where it had to be. That's why I started reading manga, to figure out what happens next.
