[Hello! this is eva, and I wanted to welcome you to my writing tips section. I wanted to make sure that you understand that I am not a experienced writer in the slightest, and most of these advices are from what I've learnt in my time here. Also, some of my tips are based on Tumblr posts that I considered helpful, so if you're one of these tumblers, all credits to you.]

Plotting your fan-fiction may be the worst part of it. A fic without a plot is as useless as a laptop without a keyboard. 

Every story has three clear parts; exposition —you need to introduce your characters, the environment and the time when it happens, climax —this is the most exiting part of the story, when we learn the outcome, and the resolution —the end of the story, is important to tie up all the loose ends (since we often forget doing that).

Alright, now that you know that let's get this straight; there may exist three parts, but that does not mean that you have to write them drastically (I mean, you can't make your characters break up without a valid reason nor end a discussion in a matter of seconds). There are another two parts that may be practical for your plot; rising action —your OC encounters a series of conflicts, and falling action —events that lead to the end of the story.

Now that you know the parts of the story crystal clear, let's develop the plot:

the wrong way: planning every chapter, writing down every detail you want to include, etc. This will only slow you down and you're going to end up focusing your time plotting while you could be writing. important; if this way helps you, then don't listen to me and go ahead.

the way I recommend: random notes on your phone, lyrics of a song that could fit on the personality of your OC, random ideas that could make your story interesting, facts about your OC to make their backstory stronger, etc. This will surely help you. You could separate them into the part you're going to use and the part you're going to discard (tip: don't erase the part you're not going to use, you could be using into another fic or you could change your mind about hat in the future)
