The saddest anime death in my opinion would have to be Maes Hughes from Fullmetal Alchemist (and Brotherhood).

He was such a great character and he loved his wife and daughter so much. Watching his daughter at his funeral was the worst. *Cries* Dang, it gets me every time. :(
