"Is that our last order?"
"Yes it is our last, one tea spoon of brown sugar for the capp."
"Comin right up!"
Phew, my my, what a day. I mean WHAT A DAY! 70 cups in one day is quite amazing right? Yes, I know for a giant coffeeshops they can get it for 8 hours, but this is something for a small coffeeshop!
As I pull the shots my buddy is fliping the door sign into "CLOSE". I grab my milk jug and the cold fresh milk. Steam it up until the foam is formed and mix it up with the milk, microfoam. I love the smell of hot warm milk. Pour the milk into the capp cup, and voila~ your hot capp is ready to serve.
I pull another two shots, followed by taking a tea spoon of milk foam. Put the foam ontop of the espresso. Espresso Machiato. Second favourite of all. The balance of espresso combined with the warm taste of milk foam, greatness was just about to begin.
"Hey Marco, what are you up to tonight?"
"To be honest I don't have any plans for tonight" I answered.
"William and I are going to a coffeeshops nearby, would you like to come with us?"
"Sure Kate!" I replied happily.
"Well then I'm goin' to mop the floor, the bar is yours Marco!" Kate answers.
She went to the mop closet, grab the mop and a bucket of water cleaning the indoor area. I was just about to grab the kettle until I realize I have to deliver these 3 cups first and start to make V60.
"Here you go buddy, enjoy your coffee. V60 is comin' in 4 minutes" I said to the customers.
"Thanks pal!" They nicely replied.
The happiness, the smile. I don't know why I really like those. Maybe I was born as a humble server. I grab the kettle, fill it in with hot boiling water, put in a thermometer. Nice 97C, I'll just wait until it cools down to 92C. Now where do I put those paper filters? Ah, inside the second cabinet.
I grind the coffee beans, medium to coarse. Digital scale, checked. Coffee server, checked. V60 dripper, checked. Wet paper filters, checked. Ground coffee, checked. 92C hot water, checked. Time to brew. Oops, I forgot the timer.
Pour 100 grams of hot water really slowly. Clockwise or counter-clockwise its your choice. Wait exactly 1 minute for blooming process, its a process of releasing gasses out of coffee. After 1 minute start pouring the rest of the hot water until it reach 225 grams. Because I use 15 grams of ground coffee with 1:15 ratio so 225 grams of water would be enough for a cup.
After all the water went through the paper filters. I lifted the V60, throw the paper filters to the bin.
Ah, the smell of heaven. The smell of freshly brewed coffee is the best. I take the glass container, and a cup. Finally V60 Brazil Cherado is done.
"Sorry for the wait guys, here you go V60 Brazil Cherado"
"Hey, thanks buddy" they replied.
Gotta go clean the bar and end the evening shift. What a day!
