Impossible pie by Penny Flanagan
This old fashioned recipe is a one bowl wonder. Just mix it up and it all separates into three layers in the oven. Magic!

ingredients 1/2 cup plain flour 1 cup caster sugar 1 cup desiccated coconut 4 eggs 125 g butter 2 cup milk
method Lightly grease a straight-sided 24cm pie dish. Pre-heat the oven to 160˚C. Sift flour into a bowl. Stir in the remaining ingredients. Pour mixture into prepared pie dish; bake in a slow oven for about 45 minutes or until lightly browned and set. Serve warm or cold, with fruit and ice cream.

notes Make sure you cook in a slow oven or the custard layer will scramble. This recipe is from an old Women's Weekly book so it's very sweet. You could probably knock the sugar back by a quarter if you find it too sweet for your taste. Serve it up with ice cream and fruit for a delicious weeknight dessert.
