i'm working on an original book thing which is hella gay, i dunno how it's gonna finish or anything, I've only written 3 chapters and an introduction. should i start publishing the chapters?

It depends on how fast you wanna write. When you start publishing there might be people who rush you to write quicker and stuff. In my personal opinion you should wait till you’re at least 3/4th done with the story so it’s less stressful and more manageable. If you’re ok with people rushing you thou start updating
