cinnamon apple muffins 2 cup diced apples (2 1/2 or 3 gala apples) 2 cups flour 1 cup sugar 2 teaspoons ground cinnamon 2 teaspoons vanilla 1/2 cup milk 1/2 cup unsalted butter (room temp) 2 eggs (room temp) 1/2 teaspoon salt 1 1/12 teaspoon baking powder (for apple coating!) put apples in a bowl, mix 1/2 teaspoon cinnamon & 2 teaspoons flour together until apples are well coated. preheat oven 375° set aside a mix of flour, cinnamon, baking powder, and salt in a measuring cup cream butter and sugar, must be well blended. and one egg at a time while blending, then vanilla. Mixers will no longer be needed afterwards. use a spatula to fold in flour and milk. mix a little at a time, do not at it all at once. (for example, a little of the flour mixture, a splash of milk, repeat) grease cupcake tins then fill around 2/3 to 3/4 bake for 30 minutes (topping is optional!) while muffins cool, mix sugar and cinnamon in bowl, melt butter(30 seconds) then lightly brush onto muffins. dip muffins in sugar & cinnamon mixture. personally i prefer it without, but its good with both ways! cream cheese frosting works also if youd like to make your own cream cheese frosting, lightly melt 1 pack of cream cheese and mix with sugar until well blended.

@BabyEaterQ if u dont own a muffin/cupcake pan then you can use cupcake liners (the paper and metal ones) and put them on a cookie pan. i also suggest buttering your muffins after whether u add cinnamon and sugar on top or not
