I just had the WiLdESt revelation from the most unlikely place. What if the AK isn't an unforgivable because it kills you. What if its unforgivable because of HOW it kills you? Maybe I'm barking up a dead tree, but bear with me. Voldes has Horcruxes. All we really know that means is he can't perma die. But when the killing curse hit him, with Horcruxes to spare, he became detached. A wondering soul/ghost/spirit/thing. Without Horcruxes, he just died. So what if AK doesn't 'kill' per say, but detaches your soul from your body? And that's why it's unforgivable. Cause by all other accounts, they have waaaaay worse ways of offering someone, why would a seemingly peaceful and dare I say, humane way to kill someone painlessly be so hated? Because its actually what they consider the worst sort of Dark Magic; that which mutilated the soul. As I said, maybe I'm wrong or smthn, was just a thought.
