It depends on the story, such as if it takes place in many different location and you want to jump from one to the other, and if there are many characters you'd like to follow. First person can be limited to one character's conscious, but if you alternate points of view, like if you have two main characters, then you'll get a more 'open' view of the world you create. Third person can also be limited because you don't 'hear' the character's thoughts like you do in first person or it can be harder to go 'in-depth'.
You could change from first to third person throughout the story too if you want, depending on the chapter and the situation your characters are in.
