Hello, I just wanted to ask what is the love interest or interests of the protagonist of Pokémon x Reader?

Complicated. lol. It’s based on the idea of Pokémon being completely sentient just not held to the same restriction as humans. Soooo Espeon, Umbreon, and occasionally Flareon.
