I write mostly fantasy. I've got a few projects in the works. And you'll notice, I write mostly fat protaginists who are strong, independent, and, most importantly, DON'T LOSE WEIGHT. 
I write the the stories and characters that I wish I could read. And I can only hope that some of you want to read them too. We ALL deserve representation in the stories that we read and, though literature has certainly become more diverse in recent years, I'm still not seeing enough strong fat people who don't have to lose weight to be accepted as a desirable character. So I've taken apon myself the wonderful burden of writing those characters so that others like me can see them selves in a story.
