My little sister actually writes stories (not on here sadly) and I edit them all the time; it is a long process though, especially when I'm doing an entire story at a time and not just a chapter for a weekly updated story. 

I actually would talk to you step by step to make sure that the things that have been "changed" are alright with you. I also ask for your opinion so it's not like I'm just changing everything without consulting with the writer first.
