Cookies n cream cookies!
1 3/4 cups all purpose flour
1 teaspoon baking soda
2 tablespoons cornstarch (Important! Make sure you add it!)
1 ½ stick salted butter room temperature (¾ cup)
¾ cup white sugar
½ cup light brown sugar
1 whole large egg + 1 yolk
vanilla extract (measure w/heart)
white chocolate chips
semi sweet chocolate chips
6 Oreos, chopped (Feel free to add as many toppings as you want)
INSTRUCTIONS
1.In a small bowl, whisk together all purpose flour, baking soda, salt, and cornstarch.
In a mixing bowl, add the room temperature butter, brown sugar, and white sugar. Beat for about a minute or two until light and fluffy using a hand mixer or with a fork. (More elbow grease, same result)
Add the egg, egg yolk, and vanilla extract. Beat again until smooth. Scrape the sides of the bowl as necessary.
Add the dry to the wet and combine until a dough forms.
Mix in the Oreos, semi sweet chocolate chips, and white chocolate chips. Then let the dough rest in the fridge for an hour or two. Or three. Or all night. However you want. Or don’t have it rest at all. (Longer it rests, more flavorful!)
Preheat oven to 350°F.
Line a sheet pan with parchment paper.
Scoop out portions of the dough that you think will be great. The skies the limit.
Pop in the oven to bake for about 11 to 12 minutes until the edges are golden and the center is still a bit soft. The cookies will continue baking out of the oven on the hot pan. If your cookies are bigger, cook’em more. If they’re smaller, cook’em less.
Voila. Yummy cookies.
