Actually, blue honey often occurs (which isn't often, don't get me wrong) when a bee collects not just pollen, but contaminants, too. Fertilizers, pesticides, the quality of air... effect honey. In the end, it can occur in any color. They can only sell it, though, when it's in amber or brown.
