Because Demeter was the harvest goddess she didn't use weapons so I don't think a bow would be a good weapons, more like the son of Apollo. Still maybe he could like go on a quest because the Trojan war is redoing itself... Idk I'm bad at ideas xD (this was to your question about percy jackson thingy)

Well I didn't want to make the main character not have a weapon and also demeter is not that well recognized that much throughout the series I think
