          / is it GIYU or GIYUU?
          
          / while both are correct, japanese romanization can vary depending on the school of romanization used. as a general rule, it's common for extended vowel sounds to just be dropped from the romanized name. thus muichirou becomes muichiro, gyoumei becomes gyomei, and giyuu becomes giyu. the former are all "more correct" but romanization is an imprecise art as a rule. 
          
          / of course, when i type "giyu" it's in regards it is actually "GIYŪ". 
          
          / i tend to write "giyu" more as the manga i read translated it into "giyu".
          
          /  i'll use whatever spelling you use for that character so not to disregard you or anything.
